Farinata Pizza
/I grew up making this recipe, which made its way to Italy from North Africa. It’s nutritious, filling and a wonderful base for being creative in the kitchen!
FARINATA PIZZA
You will need:
1 cup garbanzo bean flour
1/2 teaspoon sea salt
1 tsp baking powder
1/2 tsp garlic powder
1 cup warm water
2 tablespoons olive oil
2 teaspoons dried oregano
1 teaspoon dried thyme
1/4 cup pesto (vegan or with parmesan
1 cup chopped artichoke hearts
2 cloves garlic, crushed
fresh greens (spinach, arugula, radicchio)
In a mixing bowl, add all ingredients except pesto, artichokes, garlic and greens.
Mix well and set aside for 30 minutes.
Preheat oven to 425 degrees.
Grease a large stainless steel or cast iron skillet with olive oil.
Pour batter into it and bake for 15 minutes.
Remove from the oven, add toppings, and return to the oven for 1 or 2 minutes more.
Let cool for 5 minutes before slicing and serving.
Experiment with other toppings! My family likes tomato sauce, cashew ricotta and arugula.
