Paella

I always enjoyed this dish when traveling through Spain with my family. It’s a wonderful meal because it all cooks on one skillet and provides an excellent balance of protein, carbohydrates, fat, and fiber.

PAELLA

You will need:

1/4 cup olive oil

1 yellow onion, diced

1 red bell pepper, diced

4 cloves garlic, pressed or minced

2 teaspoons paprika

1 teaspoon turmeric

1/4 teaspoon cinnamon

1 teaspoon each: salt and black pepper

2 cups brown rice

4 cups chicken or vegetable broth

1/4 cup lemon juice

1 cup artichoke hearts

1 cup tomatoes, chopped

1 cup frozen peas

2 cups chopped chorizo sausage OR 2 cups tempeh

Fresh chopped parsley and lemon wedges to serve

Heat the olive oil in a large skillet. Add onion, red bell pepper, and garlic, and sauté for about 5 minutes. Add spices and mix well to combine.

Add the rice, lemon juice and broth. Bring to a boil, reduce to simmer, and cook, covered, for 30 minutes.

Meanwhile, sauté the chorizo OR tempeh in olive oil until crispy and cooked through.

Test the rice. If it needs more time, add 1/2 cup more broth, cover, and cook another 5 minutes. Once rice is soft, add peas, artichoke hearts, tempeh / chorizo. Stir well and serve hot!

Garnish each bowl with fresh parsley and a lemon wedge.
