Cauliflower Pumpkinseed Bread

This bread is low in carbohydrates for balanced blood glucose, packed with protein and healthy fat, and so delicious that you will want to eat it every day.

CAULIFLOWER PUMPKINSEED BREAD

You will need:

  • 2 cups riced cauliflower (I usually buy this pre-made and frozen)

  • 1 cup almond meal

  • 2 tablespoons flaxseed meal

  • 2 tablespoons chia seeds

  • 1/4 cup pumpkin seeds

  • 1 teaspoon dried rosemary

  • 1 teaspoon salt

  • 1/4 teaspoon each: turmeric, cumin, and coriander

  • 1 teaspoon each: baking soda and baking powder

  • 2 eggs, beaten

  • 1/4 cup olive oil

  • 2 tablespoons apple cider vinegar

Preheat the oven to 350 degrees.

Oil a loaf pan with olive oil and set aside.

Mix all the ingredients together in the order listed.

Spoon batter into loaf pan. You can sprinkle the top with extra pumpkin seeds if you like.

Bake at 350 degrees for 45 to 50 minutes.

Cool for 30 minutes before slicing. Enjoy!
